Stuffed Peppers/Mushrooms

This is a recipe for really tasty stuffed peppers and mushrooms. It’s a vegetarian recipe, but can be made vegan by using vegan cheese. It’s best served with salad, and/or some chips.


Prep time: 10 mins | Cook time: 25 mins | Serves: 2


Ingredients:


2 large peppers

2 large open-cup mushrooms

1 small onion

1 garlic clove

1 tin of black beans (400g)

1 ball of mozzarella (125g)

Cheddar (20g)

Salt and pepper

Fresh chilli (optional)

Sweet chilli sauce (optional)




Method:


1. Preheat the oven to 180 degrees


2. Drain the black beans and put them in a bowl. Crush them with the back of a fork.


3. Finely chop the onion and (optional) chilli, crush the garlic and grate the cheddar, adding them to the black beans


4. Mix the ingredients together well, and season with salt and pepper



5. Cut the peppers in half and remove the insides. Cut the stumps off the mushrooms.



6. Stuff the peppers and mushrooms with the black bean mix



7. Add the sweet chilli sauce to the top (optional)


8. Roast the stuffed veg for 15 minutes


9. Remove the vegetables from the oven and cover in mozzarella, switch the oven to grill.



10. Grill for 10 minutes


11. Remove from the oven and serve with salad
