Black Bean & Cheese Quesadillas Recipe

Here’s a fairly simple recipe for some tasty black bean and cheese quesadillas which are vegetarian, and can easily be made vegan by using vegan cheese instead of cheddar!


Prep time: 25 mins | Cook time: 5 mins | Serves 2


Ingredients:


A pack of 8 wraps

100g of grated cheddar (can substitute for vegan cheese)

Red or white onion

3 spring onions

1 tin of black beans (400g)

1 pepper

1 or 2 fresh chillies (depending on how spicy you want it!)

2 cloves of garlic

Crushed chillies, herbs, salt, pepper

Salad and potatoes/sweet potatoes to serve with (or oven chips)



Method:


1. If you are serving with wedges, chop your potatoes and put them in the oven first.


2. Drain the black beans and put them in a large bowl. Use a fork to crush them into a paste-like consistency, as shown in the below photo.



3. Grate the cheese and add to the black beans, mixing thoroughly.


4. Finely chop the onion, spring onions, pepper, fresh chilli and garlic and add them to the bowl with the black beans and cheese, mixing well.



5. Add the seasoning of the chilli flakes, herbs, salt and pepper to taste.


6. Take a scoop of the mixture and place it in the middle of a wrap. Smooth it down with the back of a spoon, adding more mixture if necessary to cover the wrap (but leave a little gap around the edge so that it doesn’t fall out later!) with a layer roughly 1cm thick.



7. Place another wrap on top and smooth it down with your fingers or the back of a spoon so that they are firmly together. Repeat until all wraps/mixture is used.


8. Warm up a frying pan (needs to be as big as the wraps - if your wraps are slightly bigger than the pan you can always trim their edges down) do not use oil.


9. Place the filled wrap in the hot pan, cooking for a few minutes until golden brown in colour. Flip the wrap over and cook the other side.



9. Repeat until all quesadillas are cooked. You will find that they cook quicker as you go along as the pan gets hotter. You may want to keep the others warm in the oven while you continue to cook the rest.


10. Cut the wrap into quarters and serve with (sweet) potato wedges and/or salad.
